This is main issue of your "experience".

Wayland on AMD GPU works multiple times better (much better user experience) than x11 on Nvidia.

Nvidia does not support Wayland.

Gnome on Wayland feels much better atleast in UI response and browser/text editor/common apps performance and UI responsibility.

Performance problems and bugs - can be solved very fast by direct contact with Gnome devs(they very open and always contact, always someone online).

Google "GNOME discussions" (forum and/or direct contact information thru chat in real time can be found there).

Learning curve issue - its not something related to Gnome, if user motivated user will learn.

About application UI inconsistency - it still much much much better than other DE have, and it much better now than it was before, but ofc there are ways to improve.

I use Gnome 30-40 for 3 years already (full time) (performance problems I saw is only bugs that were fixed or known)
